Watermelon Gazpacho … fantastic. not too sweet…

Watermelon Gazpacho
8 servings

6 cups cubed seeded watermelon
1 cup coarsely chopped seeded English cucumber
½ c. yellow bell pepper
1/3 c. chopped green onions
3 tbsp. chopped fresh mint
3 tbsp. fresh lime juice
1 tbsp. extra virgin olive oil
¾ tsp. salt
½ tsp. hot sauce
1 garlic clove minced
1 cup cran-raspberry juice. (optional)

Combine first ten ingredients. Place half of watermelon mixture in food prossesor. Pulse three or four times until finely chopped. Spoon into large bowl. Repeat procedure with remaining watermelon mixture.
